Broccoli Cheddar Soup (Panera Bread Dupe)

Ingredients

  1. 2 onions (cubed)
  2. Carrots (peeled and chopped)
  3. Broccoli (I used two heads) finely chopped
  4. 2 cubes of veggie stock (1 liter of veggie stock)
  5. +- 1/5 cups of flour
  6. 500ml of fresh cream (half and half)
  7. A block of mature cheddar (I also tend to just add whatever cheese I have in my fridge at the time lol)
  8. Garlic
  9. Cayenne pepper (or paprika)
  10. Salt and pepper to taste

Method:

  1. Chop the onions and fry them with the garlic (I add a bit of water to prevent the onions from burning)
  2. Chop and add the carrots
  3. Chop and add the broccoli
  4. Slowly start adding the veggie stock and then let it simmer for about 20 min
  5. This would be a good time to take your concuction off the heat and blend it with either a hand blender or a normal blender-whatever you have on hand
  6. Add your cream
  7. Once that is done, take the flour and add some water to form a paste. Slowly whisk it into your now blended soup
  8. Once you are sure there are no clumps, let it simmer for a good 20 min
  9. Add the cheese that you have grated as well as the salt, pepper and cayenne pepper/ paprika
  10. Serve it in a bowl and make sure it’s Instagram worthy
