I don’t write recipes the normal way, I just add everything together and then bam, we have food. That’s just the way I was brought up. My mom would always just ‘gooi alles together’ (throw everything together) and then you’re good. I do like the soup and I have been making it for a while. I normally keep it vegan which is healthier and what I prefer. So here it is!!
- 1 whole butternut
- Sweet potatoes (1 or 2 is good)
- Carrots (400 grams or so works)
- 2 Chopped onions
- Fresh garlic
- Spices: salt; pepper; curry powder; paprika; thyme
- Veggie Stock (I used 3 cubes)
- Fresh Cream (optional)
It’s such a super simple recipe. Chop everything, fry everything, mix everything and blend everything lol.
Okay, seriously. I halved the butternut and I baked it for about 30 min at 160 degrees (Celsius)
I then fried the onions in the garlic. Added the salt; pepper; curry powder and paprika.
I then added the carrots and took out the butternut and cut it up into the pot.
I forgot the potatoes and I quickly cut them up and put them into the pot. I used small little baby sweet potatoes.
I then added about 2 L of water and 3 cubes of veggie stock.
After boiling for about 30-45 min, until everything was soft.
I whipped out the blender and blended everything together, because, well, soup.
When you are ready, add the cream and viola! We are done! You don’t have to add the cream and keep it vegan which is what I prefer but the kids I Aupair for don’t like something when it’s ‘not creamy’
